I can’t believe it. . .Easter is almost here!

This week, I was asked to make cupcakes for my son’s class, and I went overboard (as you can see).  I can’t help it – when I get inspired, I run with it!

That inspiration came from some very talented bloggers churning out fabulous ideas.  With that said, it’s only right to give credit where credit is due.  So, let’s get to it!

I love. love. love. the bunny butt.  It’s so cute.  I saw these cookies over on Lizy B Bakes.

The green “grass” was inspired by Katrina’s cupcakes at In Katrina’s Kitchen.

Marshmallow Bunny Cottontails

This is a super simple treat for the kids to make on (or before) Easter, or to give out as gifts.  It only has three ingredients – hooray!

Marshmallow Bunny Cottontails

1 package of white candy melts (I used Make ‘n Mold)

1 package of sweetened coconut

1 package of large marshmallows

Simply pour the candy melts into a microwave-safe bowl, and heat for 30 seconds and stir.  Repeat until the candy is melted.

Pour the coconut into a small bowl.

Place a sheet of parchment (or wax paper) on the counter.  Dip each marshmallow into the candy melts, and let the excess drip off, then dip it in the coconut.

Place on the parchment to dry (coconut side up).

Store in a sealed container.

*If your kids don’t like coconut, you can dip the marshmallows in chocolate sprinkles – yum!
